So you can know what to expect, here is an outline of the entire process for your custom beef order.
Contact Longcore Cattle through our facebook page at https://www.facebook.com/LongcoreCattle/ or contact Kyle at 616-446-9360 to be put on the order list and arrange a butcher date for your order.
The $250 deposit is due to Longcore Cattle within 2 weeks of scheduling an order. For an eighth order, the deposit is $150. The deposit can be paid by check to Kyle Longcore and mailed to the farm at 12976 Ritchie Ave NE, Cedar Springs, MI 49319. We also have Venmo and can be found at @LongcoreCattle.
About 10-14 days before the butcher date, we will contact you about sending custom cutting and wrapping instructions to the processor (this does not apply to 1/8th orders). The process is as follows:
Access BCM’s website at https://www.byroncentermeats.com/ and open the “Custom Meat Processing” tab. Then select the “Beef” product type and then the “Beef Processing” button at the bottom of the screen. Now follow the instructions to submit your order! When prompted, select that you are coordinating with a producer and enter the name “Randy Longcore”. You may also call them at 616-878-1578.
Sending in these instructions too early means there’s a chance that they might get lost in BCM’s computer system. Please wait for us to send information about it just before the butcher date.

On the butcher date, we will deliver the steers to the processor. Since we handle the transport ourselves, we know that the steers are handled humanely through the entire process.
As soon as we receive official carcass weights for the steers after delivery, we will be able to calculate a price for the beef. We will contact you with that information, and payment can be sent by the same methods as the deposit. Payment for the beef must be completed before we can authorize the processor to release your beef order.
Carcasses will be aged 8-12 days. This is a vital aspect to the quality of your beef.
After aging, the carcasses will be cut, vacuum sealed, and frozen. It will be available for pickup from the processor starting the following day. Byron Center Meats will notify you when it is ready. Payment for processing will be due at pickup.
