Extra thick steaks? More Ground Beef? New York Strips and Tenderloins instead of T-bones? Whatever is your favorite, customize your order to get it exactly the way that you like it.
For our beef processing, we work exclusively with Byron Center Meats. If you are not aware of the reputation of BCM, let us be the first to tell you that they are excellent. Byron Center Meats offers time-tested cutting expertise with modern equipment, a great location, friendly customer service, and they are USDA inspected.
We have adapted these estimates from resources from Byron Center Meats for half and quarter orders. Actual quantities will depend on final hanging weight and will also be determined by our customer’s custom cutting and wrapping instructions. For example, ordering very thick steaks will result in fewer steaks total.
An order should yield 60-70% of the beginning hanging weight. This will be influenced by a customer’s custom cutting and wrapping choices, with the selection of boneless cuts reducing yield and the selection of bone-in cuts increasing yield. A half that has a hanging weight of 375 pounds should yield about 225-265 pounds of take-home meat.
